rsnapshot is a nice implementation of this kind of idea, uses rsync to make
a copy of  a directory as it was  when the snapshot was taken. It uses hard
links for files that haven't changed so it takes the disk space of a full
backup plus the incrementals.

Having said that there is a read performance gain for RAID1 (and write
penalty). I think you have to be careful with MBR and boot partitions if you
want to be able boot from the second disk if the first one fails.
